Tips to Make Life Easier in Your Purée Prep Kitchen

  • Always have a supply of liquids on hand! Milk, Cream, Half & Half, Stocks–whatever you prefer to use.
  • Bechamel Sauce (AKA White Sauce) is your best friend! You can quickly flavor it with whatever you like to make a sauce or soup, and it can be used to bind puréed vegetables, meats, etc.
  • Another friend is some type of food thickener. This site, Dysphagia Diet, lists a few. I’ve used Thickit with good results, but you should consult your physician, swallowing therapist, or dietician to find the one that is right for the person you are feeding.
  • Make more and freeze it in one portion sizes! I find that 4 oz. containers are about right for side dishes.
