Tomato Sauces

  • MARINARA: I love this Marinara recipe. As I wrote on another post, if you ever make this, you will have a hard time going back to supermarket Marinara! I don’t use the expensive canned tomatoes they recommend. Tutto Rosso tomatoes are just as good at a fraction of the price.
    For the puréed version, I use diced tomatoes (the diced tomatoes save you the step of hand-crushing the whole tomatoes). I also use basil leaves (instead of sprigs), and I don’t remove them before puréeing the sauce in the blender.
    If the person you are feeding is Level 1, you might want to pass the sauce through a sieve to get rid of any seeds.
